Visible existing contamination of lettuce was not observed

Establishment does not have written Time as a Public Health Control (TPHC) procedure and did not record the temperatures of the TCS foods prior to removal from temperature control. Time as a Public Health Control requires written procedures detailing process for Time as a Public Health Control and time-stamping for items actively held under Time as a Public Health Control. PIC voluntarily discarded and remade the items before time-stamping them according to written TPHC policy developed by inspector upon request alongside establishment - see embargo form
