Inspector notes: Observed multiple TCS foods such as cooked meatballs, pasta, chicken, and rice cooling in tightly covered plastic containers in the walk-in cooler. Containers were stacked on top of each other. According to the person in charge, all TCS foods had been cooling since 8:30 AM with internal temperatures between 47-50 °F. When placed in cooling or cold holding equipment, food containers in which food is being cooled shall be arranged in the equipment to provide maximum heat transfer through the container walls; and loosely covered, or uncovered if protected from overhead contamination, during the cooling period to facilitate heat transfer from the surface of the food.
