Inspector notes: A metal container of cooked chicken and eggs were tightly covered with aluminum foil in the walk-in cooler. The food items in question had internal temperature of 41*F. Per person in charge (PIC), the food item was covered and put in the refrigerator while still hot. Discussed with PIC to avoid putting hot food in that particular small unit and to use the freezer to cool down foods. Also, when food is being cooled down to 41*F, ensure it is done in shallow containers and loosely covered in order to effectively remove the heat as soon as possible.
