Inspector notes: Observed cold brew in a deep, covered plastic container in a reach-in cooler in the prep area with an internal temperature of 59F, probe thermometer, verified by PIC. According to PIC, room temperature water was added to the cold brew extract, which is made by steeping the grounds in water while stored in the walk-in cooler overnight, an hour before the inspection. Discussed adding ice cold water to the extract in and cooling in the walk-in to ensure that the cold brew is placed into the reach-in cooler at 41F or less. PIC placed the cold brew into the walk-in and will retrain employees to use ice water and the walk-in to rapidly cool the cold brew
