The person in charge (PIC) stated the cheese was just delivered frozen approximately 1 hour prior the inspection. Requested at the time of inspection the PIC place cases in refrigeration to continue thawing process. All foods being thawed from frozen must be thawed in an approved manner. Foods must be thawed under refrigeration, under cold running water, or as part of the cooking process
