Inspector notes: Observed cooked shredded chicken and cooked lamb in broth in the walk-in cooler with internal temperatures of 48-50F, probe thermometer, verified by PIC. The chicken and lamb were in deep, covered containers on the bottom shelves of the walk-in and were cooked and started cooling the day prior to inspection (more than 6 hours). PIC discarded the cooked chicken and lamb, see embargo form. PIC will retrain employees on proper cooling methods such as using shallow metal pans that are loosely covered and placed into the walk-in cooler/freezer on a speed rack or top shelf to facilitate airflow. Using ice as an ingredient and frequent stirring also help to facilitate rapid cooling. Excessive time for cooling of time/temperature control for safety foods has been consistently identified as one of the leading contributing factors to foodborne illness. The Food Code provision for cooling provides for cooling from 135F to 41F in 6 hours: 135F-70F in the first 2 hours; 70F-41F in the next 4 hours
