One of the grease traps, used by this establishment, had so much buildup that the lid could not be closed fully. Discussed proper cleaning and closure as a method to reduce attracting pests to the area. Also observed loose trash around the dumpsters, which provides further potential harborage for pests. Establishment to ensure these spaces are maintained as clean and closed. Establishment to reach out to third-party servicers and their landlord to help if needed

Inspector notes: Observed greenish-blue build-up in a non-working hot holding unit. Staff stated the unit is broken. Observed the top of the unit wrapped up in cellophane and confirmed that the hot hold unit has not been in use. Reviewed expectations to keep ALL surfaces clean in the establishment regardless of use. Also observed heavy black char build-up on the grills. Reviewed code requirements to clean grill surfaces daily. Also observed a build-up of organic matter on the floor under the three-compartment sink and on the wall by the grill.
