Chlorine sanitizer was also not observed in the final rinse of the mechanical dishwasher in the bar; however, it was not observed in use at the time. PIC immediately called repair service and a service technician arrived at time of inspection. Staff discontinued use of the dishwashers until they were repaired

The sauce was determined to be within safe time holding parameters and was reheated to 165°F, and the water bath was corrected
