Inspector notes: -- Chlorine sanitizer undetectable (less than 50ppm) on dishes being actively washed in the low temp sanitizing dishwasher. Reviewed concentration requirements with PIC: chlorine concentration levels must be between 50ppm-100ppm. Dish detergent and chlorine sanitizers were discovered to be empty at the time of inspection. At the time of inspection, the PIC was able to replace the chlorine sanitizer, but was out of detergent. The PIC relocated all food-contact surfaces to ware washing area to be washed, rinsed, and sanitized at the time of inspection, and they will get dish detergent from another store before using mechanical dishwasher. Ensure employees are checking for low detergents/sanitizers and utilizing test strips prior to washing dishes
