At the time of inspection, the lid and all doors/openings to the unit were kept closed, and the temperatures began to decrease from 50.3°F to 48.7°F within minutes. Discussed with the PIC ensuring employees are keeping doors and the lid for unit closed as much as possible so that it maintains cold holding temperatures at 41°F or below.
