Inspector notes: -- In walk-in refrigerator, observed the following ready-to-eat (RTE) TCS items with date marks ranging from 6/30 to 7/7: Turkey dogs (7/3), baked beans (7/3), cooked carrots (no date), navy beans (6/30), cooked broccoli (no date), corned beef (7/7), hamburger patties (7/1), cooked tofu (7/2). Also observed the following RTE TCS items without a date mark label: chicken teriyaki, cooked zucchini, cooked/roasted bell peppers, cooked cauliflower, cooked fish, cooked ground beef. The person in charge stated the items without date marks were prepared between 7/10 and 7/11. All RTE/TCS foods past 7 days of preparation were discarded by PIC at the time of inspection. All RTE/TCS foods prepared on 7/10 and 7/11 were properly date marked at the time of inspection. RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1)
