Discussed with person in charge to have the fruit flies treated. Person in charge is currently working with licensed pest control services to treat the fruit flies. Establishment must be maintained free of pests, and all pest control measures must be conducted by a licensed pest control specialist. Must eliminate current pest control problem and obtain pest control from a certified and licensed pest control specialist

Inspector notes: Observed some heavy build-up at the floor drains throughout the establishment, particularly those near the dish pit area. Discussed with person in charge to clean the floor drains on a more frequent basis to minimize build-up in the floor drains. This may also help mitigate the fruit fly issue as well. Person in charge will have the floor drains deep cleaned more frequently. Physical facility must be cleaned frequently enough to prevent accumulation of dirt, organic matter, and food debris. Person in charge separated the nested containers so that they can fully air-dry prior to stacking them together. Discussed with person in charge to fully air-dry pans and other dishes prior to nesting together. All equipment and food contact surfaces must be air-dried after properly cleaning and sanitizing

Inspector notes: Observed spatulas stored in water on the flat top grill. The temperature of the water was at 110°F. According to the person in charge the pilot light had gone out. Person in charge turned the burner back on so that the water will maintain a temperature of at least 135°F. In-use utensils must be stored in a clean, dry location; in running water; or in hot water above 135°F. If utensils are stored in food, the handles must be stored above the surface of the food. All in-use utensils were properly stored at time of inspection
