Inspector notes: Observed long cold holding table near front of the kitchen with an ambient temperature of 54*F per the built-in thermometer. Person in charge (PIC) informed inspector that the cold holding unit was not functioning properly, and a work order was placed for it to be fixed the morning of the inspection. Instructed PIC to leave signage informing workers that no TCS foods are to be stored in the unit until it is repaired. Cold holding equipment must have the capacity to maintain TCS foods at 41°F or below. Must repair cold holding equipment such that it maintains TCS foods at 41°F or below
