Inspector notes: Observed queso hot holding in a dispenser near the fryers with an internal temperature range of 115F-120F. The queso come in a commercially pre-packaged container. Per PIC, the queso has been in the dispenser warmer for less than 2 hours. All TCS foods improperly hot held were reheated to 135°F at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above

Inspector notes: Observed an open package of hot dogs in the prep cooler across from the grill without a date mark. Per PIC, the hot dogs were opened a few days prior to the inspection. All RTE/TCS foods were properly date marked at the time of inspection. RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1)
