Inspector notes: Observed rice scoops stored in a cup of water. The temperature of the water was 82°F as measured using a probe thermometer. Person in charge removed the scoops from the tepid water and placed them into a new container of hot water with a temperature as measured using a probe thermometer of 190°F. Discussed with person in charge to acquire a small crock pot which can be utilized to hot hold the in-use utensils at a minimum hot holding temperature of 135°F. In-use utensils must be stored in a clean, dry location; in running water; or in hot water above 135°F. If utensils are stored in food, the handles must be stored above the surface of the food. All in-use utensils were properly stored at time of inspection
