Inspector notes: Observed several ROP bags of frozen raw chicken and beef stored in the freezer. The dates on the bags range from 9/2/2025 to 11/9/2025. PIC stated that they ROP and freeze the left-over chicken and raw meat product from event preparation to prevent waste. Informed PIC that a variance is required for foods that are stored in ROP for over 48 hours. Instructed PIC to remove the raw animal proteins from the bags. PIC cut open the bags at time of inspection. PIC stated that they will apply for the variance. Inspector will follow up in a few days regarding application. A variance/HACCP must be obtained prior to conducting any specialized processes. Variance/HACCP applications are available through the customer portal "Permit Center" at https://maricopacountyaz-energovweb.tylerhost.net/apps/selfservice#/home.
