Inspector notes: ****Second consecutive violation**** Observed line cooler that measured 58*F with inspector min/max thermometer. Cooler contained multiple TCS items including diced tomatoes, mozzarella cheese, sliced pepperoni, sliced sausage. Observed smaller cooler next to ice machine that measured 56*F with inspector min/max thermometer. The cooler contained TCS items including diced tomatoes and chopped lettuce. Chef stated that the products had been stocked throughout the shift as items are used and the TCS items had not been in the unit for more than an hour prior to inspection. All TCS items measured between 45*F - 48*F. Chef removed back stock items and created ice packs and baths for other items to keep on the line. Chef stated that a service call was placed and should be there today

Inspector notes: Observed cut leafy greens, spring mix, shredded cheeses, diced tomatoes, pico de gallo, sour cream, and pesto with garlic registering at 55°F (in 53.5°F ambient temperature) at 2:45 PM in the main cold top table by the pizza and and 55°F (in 55°F ambient temperature) at 2:45 PM in a separate mini cold top table by the 3 compartment sink and ice bin. Cold holding equipment must have the capacity to maintain TCS foods at 41°F or below. Must repair cold holding equipment such that it maintains TCS foods at 41°F or below. PIC stated the unit is checked every day by the shift crew, but no logs were recorded or provided at the time of inspection. Employee stated the TCS foods were placed in at 11:00 AM. All TCS contents past 4 hours at time of inspection were discarded and the cold top tables were filled with ice to hold items-on-demand for services
