Inspector notes: Observed sanitizer in the 3-compartment sink at 0 ppm quaternary ammonia as measured on quaternary ammonia test strips. Observed the quaternary ammonia container attached to the chemical dispenser to be nearly empty, and the tube attached to the chemical dispenser to have air bubbles. PIC replaced the quaternary ammonia container and refilled the sanitizer compartment, after which the sanitizer tested 200-400 ppm quaternary ammonia. Discussed increasing frequency at which sanitizer concentration is tested to ensure sanitizer containers are changed out when low

Inspector notes: Observed sanitizer concentration in sanitizer buckets in the deli back-of-house to be over 500 ppm as measured on quaternary ammonia test strips. Sanitizer was diluted by PIC to approved levels at time of inspection. Discussed approved use of sanitizers with the person-in-charge (PIC). Sanitizer must be used at concentrations and in an approved manner per manufacturer instructions, 40 CFR 180.940, and 40 CFR 180.2020. Per PIC, sanitizer buckets are filled with chemical dispenser in the rotisserie area; chemical dispenser in rotisserie area is for sanitizing floors and should not be used to sanitize food-contact surfaces unless diluted to 150-400 ppm quaternary ammonia. PIC said sanitizer buckets will be filled at the deli 3-compartment sink instead
