Per kitchen staff, pozole had been made very early morning and placed into the walk-in to cool, approximately 9 hours prior. As it had not cooled within 6-hour time frame pozole was embargoed. Discussed cooling procedures with kitchen staff. Cooked TCS foods must be cooled from 135°F to 70°F within 2 hours, and from 70°F to 41°F within 4 hours for a total of 6 hours for cooling
