Inspector notes: Observed hand wash sink in back prep room with sanitizer bucket in hand wash sink blocking access. Also observed strainer at hand wash sink in bar. Hand wash sinks must be accessible at all times and must only be used for hand washing. Handwash sinks must be supplied with hot water of at least 100°F, soap and an approved hand drying provision at all times. Facilities must be maintained in a condition that promotes handwashing. PIC relocated all items blocking handwash sink at time of inspection

Inspector notes: Observed establishment utilizing large food storage bins for cut fruit, ice transport, syrups, and other items. Large storage bins do not fit into the 3-compartment sink at all to allow any submersion or any other warewashing equipment onsite. PIC was unable to explain cleaning process for equipment or demonstrate cleaning process for washing, rinsing, and sanitizing equipment. PIC will discontinue use of large food contact equipment that does not fit in warewashing equipment. Discussed options including installing larger 3-compartment sink with PIC
