Equipment lacks capacity to maintain safe food temperatures
Inspector notes: Observed the following time/temperature controlled for safety (TCS) foods with internal temperatures between 48*F - 54*F in the main walk-in refrigerator: hot honey smoked sausages, half and half, Hillshire Snacking Packs (White Cheddar/Gouda), Ice Coffee w/ Milk and Cream, Chocolate Milk, Rockin Protein Builder (Strawberry, Chocolate, Vanilla), Naked Green Machine, and 2% Milk. Person in charge indicated these foods had been in the main walk-in refrigerator for more than 4 hours. Per the establishment's equipment temperature log the measured ambient temperature of the main walk-in refrigerator was 41*F at 7:17am (~9 hours before inspection). The measured ambient temperature of the unit using a min/max thermometer was 50.2*F at time of inspection. Cold holding equipment must have the capacity to maintain TCS foods at 41°F or below. Must repair cold holding equipment such that it maintains TCS foods at 41°F or below. Person in charge indicated they would hold TCS foods in the beer walk-in refrigerator until the unit is repaired
