Inspector notes: Observed two plastic containers of hot dogs inside of a small refrigerator underneath the hot dog hot roller case. The containers of hot dogs did not have any date marking on them. According to the person in charge, the packages of hot dogs had been opened yesterday morning. Person in charge properly date marked the packages of hot dogs at time of inspection. RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1)

Inspector notes: Observed cleaning and sanitization log for the F'real ice cream machine with last entered cleaning date of November 2024. According to the person in charge the F'real machine is currently in use and the machine had TCS products inside of the unit. Discussed cleaning and sanitizing log with person in charge. Cleaning and sanitization logs must be kept for the F'real machine for a minimum of 180 days. The log must contain verification of the F'real automatic cleaning and sanitization using the approved process once every 24 hours and a manual cleaning process once every 7 days. The device must also undergo a descaling to remove hard water buildup inside the machine and maintain it clean to sight and touch. Also, high temperature sanitization will be verified weekly by heat sensitive indicators, which will be maintained with the weekly logs. Please ensure that logs are maintained for the F'real machine. All procedures in approved variance/HACCP plan must be conformed to at all times. *2nd Consecutive Violation.*
