Inspector notes: In walk-in cooler a bin of white rice measured an internal temperature of 53'F. Per kitchen staff rice had been cooked the previous day and placed into the cooler overnight to cool. As rice had not cooled within proper time frame it was embargoed. Discussed with kitchen staff more efficient cooling methods to ensure that rice cools properly. Cooked TCS foods must be cooled from 135°F to 70°F within 2 hours, and from 70°F to 41°F within 4 hours for a total of 6 hours for cooling
