Inspector notes: Observed raw pork stored above raw cut onion, raw cut cabbage in the walk-in refrigerator, also observed raw shell eggs stored above raw bean spout in the walk-in refrigerator. All raw animal proteins must be stored below ready-to-eat (RTE) foods and stored according to cooking temperature at all times to prevent cross contamination. PIC properly stored all raw animal proteins according to the final cooking temperature based on the cooking parameters in § 3-401.11 of the Food Code

Reviewed the date marking parameters with manager. Manager explained the fried chicken and cooked pork were labeled wrong date and were prepared less than 3 days prior to the inspection. Manager put proper food on above food at time of inspection
