Inspector notes: Observed shredded chicken cooling in the walk in cooler but cooling while being covered with a lid. Shredded chicken was in the appropriate cooling time/temperature at the time of inspection. TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. All TCS foods cooling were uncovered to allow for rapid cooling

Inspector notes: Observed multiple TCS food contact surfaces that had been in use since 6am (per PIC). Per PIC these are cleaned once a day at the end of the day. Raw chicken transfer trays, flour sifters (for flour in contact with raw chicken), measuring cup, and scraper all were on counter being stored at room temperature. Also, milkshake mixer attachment had been in use since 10:30am; per PIC this is also cleaned with sanitizer about every 8 hours. Mixer should be cleaned and sanitized every 4 hours when in use
