Inspector notes: Observed rice scoop with the handle in contact with cooked purple rice stored in the standing refrigerator in the back food prep area. Discussed proper storage of in-use utensils with PIC. In-use utensils must be stored in a clean, dry location; in running water; or in hot water above 135°F. If utensils are stored in food, the handles must be stored above the surface of the food. All in-use utensils were properly stored at time of inspection

Inspector notes: Observed two knives, stored on a magnetic strip directly above the 3-comp sink, with chipped edges rendering the utensils neither smooth, nor easily cleanable. Per PIC, they use these knives for prep, but were not used on the day of inspection. Discussed the importance of routine maintenance for food-contact surfaces and utensils. PIC removed the knives from service to be repaired at time of inspection. All food-contact surfaces must be smooth, non-absorbent, and easily cleanable. All equipment must be maintained in good repair at all times. Repair all equipment to a state of good repair prior to next routine inspection
