Inspector notes: Observed employee in warewashing area actively sanitizing food trays in quat sanitizer for less than 10 seconds after properly washing. Also observed employee rinse trays after sanitizing. Discussed proper warewashing techniques with the person in charge. Food contact surfaces must be rinsed after being washed and must be sanitized per manufacturer requirements. Quat sanitizer used requires a contact time of at least 1 minute to effectively sanitize. Inspector notes: Observed dairy whipped cream and chocolate/cream mixture at 45*F in ice near soft serve station. Ice bath did not fully encapsulate food items in containers, leaving top portion prone to being out of temperature. Per employee, if items are not fully used by the end of the night, they are stored in refrigeration. Per person-in-charge, some items are kept and discarded after 4 hours. Discussed with PIC placing items under time as a control policy. Time as a control policy was implemented and TCS food items were time stamped at time of inspection. Time as a Public Health Control requires written procedures detailing process for Time as a Public Health Control and time-stamping for items actively held under Time as a Public Health Control. PIC and employee stated items will be held for 4 hours and discarded when 4 hours has passed
