Ambient temperature of unit observed at 46.4'F. PIC stated all food items were prepped from cold or ambient room temperature at 10am (less than 4 hours ago) and placed in prep cooler after prep. TCS foods prepared from cold or ambient room temperature ingredients must be cooled from 70°F to 41°F within 4 hours. All items were moved to alternative refrigeration to be rapidly cooled to 41'F at item of inspection
