Inspector notes: Observed the following time/temperature controlled for safety with the following listed prep and discard dates: cooked beans (6/26-7/2), cooked poblano peppers (6/20-6/27; discussed day of prep as day 1, plus 6 days for holding), cooked tinga chicken (6/26-7/2), chipotle sauce made with chipotle peppers removed from hermetic seal (6/24-6/30), and cooked carnitas (6/24-6/30). Also observed cooked chicken wings and RTE/TCS sauces portioned in smaller bottles without a datemark. Person-in-charge (PIC) datemarked sauces and also stated chicken wings are to be discarded today. All RTE/TCS foods past 7 days of preparation were discarded by PIC at the time of inspection. RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1)
