Person in charge, stated it had been used earlier this morning, but has not been fully disassembled to clean at the three-compartment sink since Sunday (6/22). Observed dried garbanzo bean debris in the front of the small meat grinder. According to the person in charge the grinder was last used yesterday. If used with TIME/TEMPERATURE CONTROL FOR SAFETY FOOD, EQUIPMENT FOODCONTACT SURFACES and UTENSILS shall be cleaned throughout the day at least every 4 hours. Please store all food contact surfaces clean. The deli slicer and grinder were taken apart to be cleaned at the three-compartment sink at time of inspection
