Inspector notes: Observed a collection of large mixing wand attachments for a commercial dough mixer stored on a drying rack in the warewashing area with an accumulation of opaque, uniform and circular organic material on the food contact surface. According to PIC, the drying rack where the mixing wand attachments were is used to store extra equipment, and they were unaware of the last time it was used. Discussed cleaning frequency with PIC. All food-contact surfaces must be cleaned to sight and touch. All food-contact surfaces that contact TCS foods must be cleaned every 4 hours by washing, rinsing, and sanitizing. PIC relocated all food-contact surfaces to warewashing area to be washed, rinsed, and sanitized at the time of inspection
