Employee stated that time was just put on the items and that the items had been out of the cooler for about thirty minutes. PIC discarded the all items-see embargo form. Ensure that when time temperature control is used for up to four hours that the food has an initial temperature of 41F or below when removed from cold holding and the food is marked or otherwise identified to indicate the time of discard following internal policies not exceeding four hours
