Owner explained that the tape used to write dates had not been changed. Temperature Control for Safety foods may not be held beyond the dates on containers. Items were marked with correct dates at time of inspection. Observed sliced ham in small prep cooler with no processed on or discard on dates. As per the person in charge the ham had been sliced and frozen and placed in refrigerator earlier in the week. Ham was dated with correct discard date
