Inspector notes: Observed brisket chili in warmer at 130-133*F. Hot hold of chili to be at 135*F or greater. As per the person in charge chili was prepared this am and placed in warmer about 12pm. Chili was reheated to 165*F and returned to warmer. Advised staff to use metal a metal stem thermometer to verify hot hold temperatures
