Inspector notes: Observed cooked rice (98°F), cooked black beans (120°F), and cooked pinto beans (120°F) hot holding below 135°F in the service prep table. Alerted the manager and reviewed temperature logs. Both beans had been placed in the hot hold less than one hour prior, and the rice had been measured at the correct temperature within the last two hours. The manager decided to discard all improperly held hot items at time of inspection (see embargo). Staff turned up the hot table temperature at the time of inspection. Discussed the importance of keeping hot foods above 135°F

Manual and Mechanical Warewashing Equipment, Chemical Sanitization- Temperature, pH, Concentration and Hardness (corrected on site)
Inspector notes: Observed the automatic sanitizer dispenser at the three compartment sink with quat sanitizer measuring at 0 PPM. The staff member who was setting up the three-compartment sink was unaware the chemical concentrate was empty. The person in charge switched out the empty chemical concentrate bottle for a new bottle of chemical concentrate, at time of inspection. After servicing the three-compartment sink, the chemical sanitizer was within range. Staff will test the strength of the sanitizer on the first cycle of dishes. Reviewed sanitizer concentration requirements. After a discussion with the person in charge, it was determined that the root cause of the violation was staff training, which resulted in the violation

Inspector notes: Observed a wiping bucket with a damp cloth inside measuring at 0 PPM of quat sanitizer. After the three-compartment sink was serviced all wiping buckets were remade at the appropriate range of sanitizer. All wet wiping cloths must be stored in sanitizer buckets with approved sanitizer concentrations. Wiping cloths were placed in sanitizer buckets with approved sanitizer concentrations at time of inspection
