Inspector notes: Observed in use mechanical dishwasher in the kitchen utilizing low temperature chlorine sanitizer to sanitize food contact surfaces at time of inspection. Final rinse chlorine sanitizer concentration measured at 0 PPM. The dish machine was ran again multiple times with a final rinse chlorine sanitizer concentration of 0 PPM each time. Acceptable chlorine concentration shall measure between 50-100 PPM. PIC made service call at time of inspection. Dish machine technician onsite at the end of the inspection and was able to restore dish machine sanitizer concentration to approved concentration of 50 PPM after replacing a hose

Inspector notes: Observed 2 - 22qt containers on marinara sauce cooling in the walk-in cooler. With probe thermometer the product measured 120*F and 130*F. Chef stated that the product was place in cooler approximately 1 hour prior to inspection. Chef had staff pull product and place in ice bath with ice wands to continue the cooling process. Discussed with Chef that acceptable methods of cooling include: placing food in shallow pans, separating the food into smaller or thinner portions, using rapid cooling equipment (i.e. a blast chiller), stirring the food in a container placed in an ice water bath, using containers that facilitate heat transfer, or adding ice as an ingredient
