Inspector notes: Inside main two door refrigerator with large covered tub full of cooked pasta. Internal temperature of cooked pasta is at 90*F. Notified Person In Charge (PIC) and employee. Employee verified with internal thermometer cooling cooked pasta is at 85*F. Per employee pasta was prepared at 6am today. Time is 11am. Pasta would need to be below 70*F within two hours at 8am today. Also observed covered extra large metal bowl with cooked pasta and cooked chicken. Internal temperature is at 100*F. Notified PIC and employee. Per employee this was prepared at 7:30am; at 9:30am cooked pasta chicken salad would need to be 41*F. Time is 11am. PIC will have employee discard all improperly cooled cooked pasta and cooked chicken pasta salad. ======Within 2 hours from 135°F to 70°F and within a total of 6 hours from 135°F and 41°F or less
