Only one time stamp was noted with a start time of 7am, making the current discard time over 6 hours. Staff indicated that the potatoes had actually been removed about an hour before and the time stamp was not recorded. Ensure each container/batch of food being monitored using time as a control has its own time stamp. All TCS foods being held under time as a control were properly time stamped at time of inspection
