Inspector notes: Observed dishes that were stored as clean at the clean dishes rack according to the person in charge (PIC). Upon separating some of the dishes stored as clean, cheese sauce was observed stuck on the inside of one of the pans. Another pan had some greasy residue on it, and another was observed with small bits of egg on the inside of another pan. The dirty dishes in question were sent to the 3-compartment sink to be washed, rinsed and sanitized at time of inspection. Discussed with person in charge that all food-contact surfaces must be cleaned to sight and touch
