Inspector notes: Observed lettuce, tomatoes, and sliced cheese in the main and side prep tables held on time as a control twenty-minutes past the discard time and with internal temperatures of 66*F-68*F. Informed PIC that the items are past the discard time and need to be discarded and replaced. PIC instructed employee to discard and switch the items. After instruction, employee assembled a burger using the lettuce, tomatoes, and cheese that were past the discard time. Informed PIC that the burger needs to be discarded and the items need to be replaced before food can be made using it. PIC instructed employee. Employee discarded burger and items held past the hold time at time of inspection
