Inspector notes: Observed no timestamp for sliced tomatoes and shredded lettuce on assembly line. All items on assembly line use time as a control. Employee added time stamps of more than 4 hours at time of inspection. Provided training to employees on time as a control requirements that food MUST be discarded within 4 hours and discard time must be provided. Items were relabeled at time. Ensure all TCS foods are kept with timestamps and discarded within 4 hours when using time as a control. PRIORITY VIOLATION-3-501.19 (B1,3-4; C1,4-5) - Priority: Time as a Public Health Control; Temperature, Discarded. Addl Notes: Observed sliced tomatoes on assembly line with an internal temperature of 72*F. According to PIC, tomatoes had been previously placed on assembly line within 10 minutes prior to inspection. It was determined that the tomatoes were previously removed from a temperature-controlled environment more than 4 hours prior to inspection and stored on bottom shelf before placing it on assembly line. Discussed importance of documenting foods as soon as they are removed from walk-in cooler to avoid any confusion. Tomatoes were discarded at time of inspection
