Inspector notes: Observed sliced tomatoes, shredded lettuce, and Swiss and American Cheese with an internal temperature of 70*f. Time stamp stated food was to be discarded at 3:03pm ( 1 .5 hours prior to inspection) and did so at time of inspection. It was also determined that TCS foods such as lettuce is being stored below counter for more than 4 hours and was not being discarded. Discussed requirements for using time as a control policy **REPEAT VIOLATION***
