Inspector notes: Observed lettuce and tomatoes with an internal temperature of 70-77*F on serving line time stamped for 2:03PM 5 minutes prior to inspection. It was determined that the lettuce and tomatoes had been removed from temperature controlled environment since 10 AM and stored underneath serving line. Discussed time as control policy requirements and initial temperature of 41*f once removed from temperature controlled environment in order to be in compliance with policy. PIC discarded lettuce and tomatoes at time of inspection

Inspector notes: Observed sliced tomatoes, chopped lettuce, and cheese on the assembly tables with a time stamp of 10:34am at the start of the inspection. Observed staff placing the 10:34am labels at the start of the inspection. The items were holding 64F. PIC determined the time stamps were incorrectly labeled. The tomato and lettuce were properly labeled from 9am-1pm. TCS food items must have an initial start temperature of 41F or below prior to use 4-hour time as a control for cold food items. Also observed American cheese, Pepper Jack cheese, and sliced tomatoes with a time stamp of 6:11am-10:11am during the inspection. PIC discarded these items as they were held past the four-hour time. When using 4-hour time as a control, the food products must not be stored past the given 4 hours
