Inspector notes: Observed an open package of sliced salami, dated 1/1, an open package of sliced ham, dated 12/25, and an open package of hot dogs without a date mark. PIC discarded the TCS foods for being held past the discard date or with an unknown start date, see embargo form. Date marking requirements apply to containers of processed TCS food that have been opened and to food prepared by a food establishment, in both cases if held for more than 24 hours, and while the food is under the control of the food establishment. Based on a predictive growth curve modeling program for Listeria monocytogenes, ready-to-eat, time/temperature control for safety food may be kept at 41F, for a total of 7 days. Adding 6 to day one (6+1) determines the discard date. PIC will retrain employees
