Inspector notes: Observed the low-temp mechanical dish machine with a concentration of 0 ppm chlorine while in use. The machine was ran and the chlorine was primed several times; the chlorine remained at 0 ppm. PIC will contact the dish machine repair/service company. The dishes will be sanitized in the main kitchen or the sanitize compartment of the 2-comp sink in the service kitchen until the chlorine concentration of the dish machine is 50-100 ppm. On the upright refrigerator, there is a temperature and sanitizer log for the dish machine. The sanitizer should be tested prior to use to ensure that dishes are properly sanitized. See violation # 48

Inspector notes: Observed no chlorine test strips in the service kitchen or main kitchen. According to employee, the quat test strips are the only test strips available. Chlorine test strips must be used to test the dish machine, which uses chlorine as a sanitizer, see violation #16. Please provide a picture of chlorine test strips by email within 10 days
