The person in charge (PIC) stated the pork loin was cooked and placed in warmer approximately 15 minutes prior to the inspection (4:00 PM). The temperature on the hot well steamer was adjusted at the time of inspection to maintain hot holding at 135°F. All TCS foods improperly hot held were reheated to 165°F at time of inspection.
