Inspector notes: Observed cheese sauce (118°F) in the hot holding unit below 135°F. All other items in the hot holding unit were above the required 135°F. Upon further investigation, it was determined the cheese sauce, which had been reheated on the stove an hour and a half before temperature measurement, had not reached the proper reheat temperature. Staff reheated the cheese sauce to the correct temperature, at time of inspection. Discussed reheating requirements with staff and provided guidance
