Inspector notes: Observed ham and jalapeno croissants placed out at ambient air temperature with a time stamp for croissants to be held between 5AM-9AM, with the current time being 9:30AM. Per employee, croissants were placed out at approximately 7AM, but had no time stamp with said time. Time as a Public Health Control requires written procedures detailing process for Time as a Public Health Control and time-stamping for items actively held under Time as a Public Health Control. Discussed with person in charge (PIC) and employee that all TCS foods held under Time as a Public Health Control must be time stamped with the time the item was removed from temperature control and sold/discarded within 4 hours. Ham and jalapeno croissants not time stamped were discarded at time of inspection

Inspector notes: Observed two spray bottles filled with window cleaner and multi-surface cleaner stored on a rack above rows of single use to go cups. Informed PIC that chemicals cannot be stored above food, food contact surfaces, or single service items. PIC removed the bottles and properly stored them in the back at time of inspection. Discussed with PIC that all chemical bottles must be labeled with the common name. Chemicals must be stored away from food, utensils, and single service items at all times to prevent contamination. All chemicals were relocated and properly stored by PIC at time of inspection

Improper cooling methods used (corrected on site)
Inspector notes: Observed six pitchers filled with hot brewed coffee and tea with milk and/or condensed milk cooling on the metal counter in the back of the kitchen. The internal temperatures of the beverages ranged 101*F-111*F. PIC informed that the pitchers had been on the counter cooling for about 30 minutes. PIC stated that they leave the beverages on the counter for about an hour or more before being placed in the walk-in cooler. Informed PIC that due to diary being added to the coffees and teas while hot, these products need to be cooled under refrigeration to ensure that they meet the cooling parameters. PIC placed the pitchers in the walk-in cooler at time of inspection. Suggested adding the milk to the pitchers after the product has cooled to PIC. TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means
