Inspector notes: Observed multiple 5-gallon containers of partially cooked chicken wings, sealed and stacked on top of each other, actively cooling in the walk-in refrigerator. The chicken wings registered internal temperatures ranging between 60°-68°F with a probing thermometer. Per manager, the wings were partially cooked 2 hours prior to inspection. The establishment shall organize and contain the partially cooked wings in a manner that maximally facilitates the cooling process. Instructed the manager to open each container and arrange them so that they are not stacked on top of each other until they have reached 41°F
