Inspector notes: Observed a container of raw chicken above drinks and other RTE foods in the cold-holding unit in the back. Discussed proper storage of raw chicken and meats based on cooking time with person in charge (PIC). PIC moved the chicken to the bottom shelf at time of inspection. All raw animal proteins must be stored below ready-to-eat (RTE) foods and stored according to cooking temperature at all times to prevent cross contamination. PIC properly stored all raw animal proteins according to the final cooking temperature based on the cooking parameters in § 3-401.11 of the Food Code

Inspector notes: Observed a gallon of Ortho pest control spray on a supply shelf. Discussed with person in charge (PIC) that only a certified pest control specialist can provide pest control and that they cannot store pest control chemicals at food establishments to reduce risk of contamination. PIC removed the spray from the establishment at time of inspection. All pest control for the establishment must be performed by a certified pest control specialist and chemicals for pest control must not be stored onsite. PIC removed pest control chemicals from premises at time of inspection
